Tea Time
In 2015, Ellis and Wachter co-founded Lost Pines Yaupon Tea along with a friend, John Seibold. Today, they wild-harvest yaupon leaves on four privately owned properties in Bastrop, dry and roast them in a facility nearby, and package and sell loose-leaf and bagged teas in stores throughout Austin. By thinning the yaupon, they also make way for native grasses, which are an essential habitat for the endangered Houston toad. Property owners can receive a wildlife exemption for restoring toad habitat, and thinning yaupon is one way to restore that habitat. “There’s an inexhaustible supply of yaupon,” Ellis says. “But instead of destroying the forest, you’re restoring it.”
